Dr. T's Vegan Banana Pudding


4 cups unsweetened coconut milk yogurt ( I used Unsweetened Vanilla by So Delicious)

1/2 teaspoon turmeric

3 bananas sliced

1 teaspoon vanilla extract

1/4 cup coconut sugar ( I used Organic Vanilla Coconut Sugar by Big Tree Farms found at Sprouts)

1 package of Biscoff cookies ( I use this in place of the traditional vanilla wafers :) )

Plant based whipped cream of your choice ( I used Sprouts Oat Milk whipped topping I found at Sprouts Market)


Add the coconut yogurt, vanilla extract, sugar, turmeric and one of the sliced bananas to your food processor ( can use a blender or handheld mixer). Blend into consistency of a smooth vanilla style pudding.

In a large glass serving container, layer 1/4 of the pudding mixture on the bottom. Follow with a layer of Biscoff cookies, then a layer of banana. Repeat alternating layers until all ingredients have been used up. Should be about 4 to 6 layers.

Refrigerate for 2 hours to chill. Top with your plant based whipped cream and crushed Biscoff Cookies. This is a hit for small get togethers! Easy to make in a pinch too! Enjoy and let me know if you try it!
