
This simple 3 to 4 ingredient recipe satisfies your sweet tooth AND also features one of my favorite stone fruits – DATES!

Dates contain about 23 calories in 1 serving (1 piece).
Dates are abundant in fiber. They contain a special soluble fiber called Beta-D-glucan. (Bonus fun fact: Consumption of foods containing Beta-D-glucan can improve seasonal allergies). Soluble fiber helps to regulate blood sugar, aids with bowel movements, and helps with feeling fuller longer.
Dates also improve the colonization of good gut bacteria which improves overall gut health.
Dates are high in potassium, which helps with regulating blood pressure.
Dates have been used to facilitate spontaneous labor. This magical fruit helps strengthen uterine muscles and promotes cervical dilation.
Ingredients
· 16 Medjool dates
· Creamy peanut butter or other nut/seed butter of your choice
· Dark Chocolate bar of your choice (can also use JoJo’s Bars - I get mine from Costco)
· Hemp seeds (my go to) or coconut flakes for topping (optional)
Instructions
Remove the pits of the date. Stuff each date with a 1/2 tablespoon of peanut butter. Place half of a square of dark chocolate into center of date
Sprinkle with hemp seeds, coconut flakes, or enjoy as is!
Can place in the fridge to save for throughout the week!
