1 15oz can of garbanzo beans (chickpeas)- Mashed with a fork or blended lightly in a food processor . Bonus if no added salt otherwise - rinse off with water and drain before use.
1 tablespoons of vegan mayo (I like the Just Mayo brand)
1-2 tablespoons of mustard of your choice ( I like spicy flavor profiles - so I sometimes add in Trader Joe's Jalapeno sauce or Thai Chili Sauce )
Diced cucumber OR celery
Diced tomatoes (optional)
Salt and Pepper to taste
Optional Add-ins: flax seeds cilantro, walnuts
Mix all ingredients and enjoy! Eat with crackers, in a wrap or as a sandwich ( my personal favorite)!
