I found what to eat on the go is the hardest thing for people — lunch is often skipped leading to over consuming later in the evening and increased cravings .I LOVE wraps - packed with legumes and veggies - they are my go to "grab and go" food. Fiber filled to keep me full without a sugar crash.
Ingredients
Organic Wheat Tortilla Wrap ( I got mine at Trader Joe’s )
Hummus
Organic Baby Spinach ( best if organic as Spinach is on the Environmental Working Group Dirty Dozen list)
Shredded cabbage ( green and/or red)
Shredded carrot
One can of Garbanzo beans/ Chickpeas (low sodium) . Don't forget to rinse off.
Marinades/Dressings/Spices (per YOUR preferred flavor profile) . I used garlic powder and Buffalo Sauce and a Cashew Dressing.
Instructions
Drain and rinse beans, coat with sauce of your choice ( I used Buffalo sauce) and toss. Heat on medium and season ( I used garlic powder).
Toss Cabbage and Carrot mix with either a homemade dressing or store bought ( I used TJ’s spicy cashew dressing )
Spread hummus on your wrap and pile on veggies and chickpeas. I recommend making six wraps at once and keeping in the fridge as a "Grab and Go" option. Enjoy !
